A rarer pleasure than its white cousin, Blue Wensleydale is a firm mellow creamy cheese cut with a strong acidic tang that sings on your tongue. Subtler and less salty than Stilton, it’s at the milder end of the strength scale, but still delivers mouthfuls of flavour. Supreme champion in the 2012 International Cheese Awards, Blue Wensleydale is so dangerously moreish, it shouldn’t just be kept in the fridge, but also under lock and key.
What with Wonderful in a pear and walnut salad, with proscuitto or stirred into a broccoli or parsnip soup. Goes down well with an easy drinking red like Macon Village Rouge.
