Dunsyre Blue is a spicy but gorgeously mellow creamy blue cheese made from pasteurised cow's milk by H Errington in Ayrshire.
Dunsyre was first created because there was no sheep's milk in winter to make Lanark Blue. Fortunately for us the Ayrshire cows obliged and Mr Errington was able to create this seriously wonderful cheese. It's a moreish mouthful of piquant spice that melts into rich warm creaminess. There's a touch of salt too, but not too much – just enough to make your tongue tingle.
What with? If you're lucky enough to have a wedge of Dunsyre on the cheese board get a light Burgundy and enjoy. Seriously good melted on steak, and transforms a plate of pasta.
