A dense and smooth, lightly yellow cheese with a uniquely savoury taste, which is best revealed when pared into pretty rosettes with the Cheese Curler also known as 'Girolle originale'. The name 'Monk head' clearly refers to the rosettes, that resemble the hair style of monks in medieval times, when this fine cheese was first created.
Whether you want to invest in a Cheese Curler or not, it is important to pare not cut this cheese. Having said that, it is great fun watching everybody create their own cheese rosettes round the table.
What with? This is a cheese for parties, special occasions and... champagne! Some crackers and a jar or two of Walnut Chutney - let the party begin!
